Trick your brain with cauliflower.
4 Tb. olive oil
1 medium onion diced or 2 shallots
1 cup finely diced celery
1 head cauliflower, trimmed and coarsely chopped
1/4 tsp. celtic sea salt
In a large skillet heat olive oil over medium heat
Saute onion for 10 minutes or until soft
Add celery to skillet and saute for 5 minutes
Meanwhile place cauliflower in food processor until the texture of rice
Add cauliflower to skillet, cover and cook for 5-10 minutes, until soft then add salt.
